This means you have abundant options to curb any craving; giving you every opportunity to make healthy choices when fueling your body. These delicious chewy cookies are a plant-based version of Liv\u2019s magic cookie dough, spiced with cinnamon and nutmeg and topped with a lush layer of chocolate; they taste just as good as they look.<\/span><\/p>\n<p>&nbsp;<\/p>\n<h3 class=\"p1\"><span class=\"s1\"><b>Christmas Jewel Studded Cookies<br \/>\n<\/b><\/span><\/h3>\n<p class=\"p1\"><span class=\"s1\"><b>Serves: 6<\/b><\/span><\/p>\n<p class=\"p1\"><span class=\"s1\"><b>Prep time: 25 minutes<\/b><\/span><\/p>\n<p class=\"p1\"><span class=\"s1\"><b>Cook time: 15 minutes<br \/>\n<\/b><\/span><\/p>\n<h4 class=\"p1\"><span class=\"s1\">Ingredients<img loading=\"lazy\" decoding=\"async\" class=\" wp-image-57593 alignright\" src=\"https:\/\/clickclack.com\/wp-content\/uploads\/2020\/11\/IMG_0551-min-225x300.png\" alt=\"Christmas cookies\" width=\"383\" height=\"511\" \/><\/span><\/h4>\n<p class=\"p1\"><span class=\"s1\">1 tbsp ground flaxseed<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">\u00bd cup almond butter<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">1 tsp baking powder<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">\u215b tsp salt<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">1 tbsp erythritol (coconut sugar will also work)<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">2 tsp cinnamon<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">\u00bc tsp nutmeg<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">50g dark chocolate (85-90%)<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">1 tbsp goji berries<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">1 tbsp pistachios<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">2 tsp chia seeds<br \/>\n<\/span><\/p>\n<h4 class=\"p1\"><span class=\"s1\">Method<\/span><\/h4>\n<ol class=\"ol1\">\n<li class=\"li1\"><span class=\"s1\">Preheat the oven to 180\u00baC and line a baking tray with baking paper.<\/span><\/li>\n<li class=\"li1\"><span class=\"s1\">In a small bowl, make a flax egg by combining the flaxseed with 30ml of water and allow to sit for 2 minutes to thicken.<\/span><\/li>\n<li class=\"li1\"><span class=\"s1\">In a large bowl, combine the almond butter, baking powder, salt, erythritol, cinnamon and nutmeg.<\/span><\/li>\n<li class=\"li1\"><span class=\"s1\">Stir in the flax egg and mix until it forms a dough. This is best done with hands.<\/span><\/li>\n<li class=\"li1\"><span class=\"s1\">Shape into six cookies and bake in the oven for 12-15 minutes. Leave to cool completely before removing from the tray.<\/span><\/li>\n<li class=\"li1\"><span class=\"s1\">Melt the chocolate in a bowl sitting over a pot of gently simmering water, or in the microwave in 30-second increments, stirring between each.<\/span><\/li>\n<li class=\"li1\"><span class=\"s1\">Spread over the cooled Christmas cookies and before it sets, sprinkle over pistachios, goji berries and chia seeds.<\/span><\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Just because we\u2019re now in the Christmas season doesn\u2019t mean you have to put aside your health and fitness goals.
